Step
1
- 1/2 pound raw, sheled shrimp
- 1/4 t. salt
- 1 t. cooking wine or sherry
- 1/3 egg white
- 3/4 T. cornstarch
- 1/2 c. oil for frying
- 1 green onion, cut into
six pieces
- 6 slices ginger root
Step 2
- 1/3 t.
each: cooking win or sherry, salt, sesame oil
- dash
of black pepper
- 1
t. cornstarch
- 2
T. water
- 1
cup green peas, precooked
Rinse and devein shrimp, drain.
Place the shrimp in a bowl.
Add ingredients (in Step
1 above) in order listed, mixing after each addition.
Before frying, add 1 Tablespoon oil and mix.
The shrimp will separate easily during frying.
Mix ingredients (in Step 2 above).
Let stand for future use.
Heat the wok and add oil.
Fry shrimp over medium heat until cooked.
Remove the shrimp.
Remove the oil.
Reheat the wok and add a Tablespoon oil.
Stir-fry the green onion and ginger root until fragrant.
Add the green peas and stir.
Add shrimp.
Turn heat to high and quickly stir to mix.
Serve.
