Polish Apple Cake

  • 5 apples peeled and cut into thin slices
  • 5 tbs. sugar
  • 2 tsp. cinnamon
  • 3 cups flour
  • 2 1/3 cups sugar
  • 1 ½ tsp. baking soda
  • ½ tsp. salt
  • 1 ½ tsp. baking powder
  • 4 eggs
  • 1 cup oil
  • 2 tsp. vanilla
  • 1/3 cup orange juice

Mix 5 tbs. sugar and 2 tsp. cinnamon and sprinkle over cut apples and toss. Set aside.

In mixing bowl, combine flour, remaining sugar, salt eggs, oil, vanilla and orange juice.

Blend together on low speed for one minute, then 3 minutes on medium speed.

Add baking soda and baking powder and mix for one more minute.

Grease a tube pan and fill with alternating layers of batter and sliced apples, ending with batter.

Bake at 350° for 1 ½ hours.
