Jimmy's Rice

  • 1/2 cup of butter
  • 1 small chopped onion
  • 1/2 cup white rice (not instant rice)
  • 1/2 package frozen spinach
  • 2, 10 1/2 ounce cans of chicken broth (some prefer 16 ounce)



    Saute onion in butter.
    Add chicken broth, spinach and rice.
    Bring to a boil.
    Cover and simmer for 1/2 hour or until the broth is absorbed.
